Organic edible fungi refer to mushrooms (large fungi) with large fruiting bodies that are edible, commonly known as mushrooms. Most of them belong to the subphylum Basidiomycetes, and the common ones are: shiitake mushrooms, straw mushrooms, mushrooms, fungus, white fungus, Hericium erinaceus, bamboo fungus, pine mushrooms (Matsutake mushrooms), mushrooms, red mushrooms and porcini mushrooms, etc.; a few belong to the subphylum Ascomycetes , among them: Morel, saddle, truffle and so on. The following is an introduction to the picking technology of organic edible mushrooms:
1. Master the best harvesting period of organic edible mushrooms Take shiitake mushrooms as an example, the signs of maturity are seven or eight, the bacterial membrane has been broken, the bacterial cap has not been fully developed, and there is still a little inner volume, forming a "cause gong edge", and the bacterial gills have been fully stretched. Long, turning from white to tan or dark brown. This is the season for mushroom harvesting. Shiitake mushrooms harvested at the right time have bright color, strong fragrance, thick cap, soft and tough flesh, high commodity value, and when harvested after expiration, the mushroom cap is fully developed, the flesh is thin, the foot is long, and the gill is discolored. At this time, its weight is reduced. Commodity value is low.
2. Pay attention to the harvesting technology of organic edible mushrooms with stalk mushrooms (shiitake mushrooms, mushrooms, straw mushrooms, etc.) When picking mushrooms, pinch the base of the mushroom stalk with your thumb and forefinger, rotate left and right, and then gently pull up. Do not bruise the surrounding mushroom buds, or let the mushroom feet remain on the mushroom tube, which will affect the future fruiting. . If the adult mushroom grows densely and the base is deep, use a small sharp knife to dig up from the base of the mushroom foot, taking care to keep the flower shape intact.
3. The selection of organic edible fungi is suitable for harvesting in sunny days, which is conducive to processing. Generally, do not harvest in cloudy and rainy days. The reason is that the amount of water is high, it is difficult to dry, and the quality is affected. If not harvested, it will age and rot. Work hard. For Tremella, black fungus, etc., stop spraying water on cloudy days, strengthen ventilation, let the ear pieces flatten, and wait for a good day to harvest, which is conducive to drying.
4. With the fresh mushrooms collected in suitable containers, organic edible mushrooms should be packed in small baskets or small baskets, and should be handled with care to keep the entity intact, prevent mutual crushing and damage, and not affect the quality. The harvested fresh mushrooms should be separated according to the size of the mushroom body and the quality of the flower shape, and should not be mixed together, and then placed in a separate container for processing in different categories.
5. Before harvesting, the organic edible mushrooms should be dehydrated or dehydrated if they are used as fresh-keeping products for export or dehydration and drying before harvesting. If water is sprayed before harvesting, the water content of the mushroom body is high, the gills turn brown when processing fresh mushrooms, and the gills turn black during dehydration and drying, then the product does not meet the export requirements. If it is sold domestically, the mushroom body will be prone to mold if the moisture content is too high. Therefore, water should not be sprayed before harvesting, so that the mushroom body can maintain the original moisture, so that the appearance is beautiful, the commodity value is high, it is easy to sell, and the market is smooth.
